Red beans are an excellent source of dietary fiber, a good source of protein and iron and are low in fat. Our small red beans hold their shape well when cooked, so those who prefer more “bite” and structure to their beans in Latin-inspired fare, small red beans are a common substitute for the more mealy-textured pinto beans.

Add 1 cup beans to a pot and cover with cold water. Soak for 6-8 hours. (Quick soak method: Bring to a boil, cover, remove from heat, let sit for 1 hour.) Drain and cover with fresh water or stock by 1 inch. If desired, add aromatics such as bacon, ham/bones, garlic, onion, bay leaf, spices, etc. Bring to a boil, reduce heat, and simmer to desired doneness, 1-2 hours. Add water as needed during cooking to keep beans covered. Add salt or acidic ingredients 10-15 minutes before desired doneness. Makes about 2 to 2 1/2 cups.
Store in an airtight container in a dark, cool, dry place for up to 24 months. Cooked beans can be stored for 1 week in the refrigerator or frozen for up to 6 months.
